I am going to skip the apologies today, which I always do...but today, I have a treat for everyone...
I promised to share some recipes with you guys, and its harder than I thought to pick an easy, fun, accessible recipe. I have thought of cupcakes, salads, diy projects, like how to make your own cheese (insane right?) and juicing...but I think I found the perfect recipe to share today, its sunday, and its a lovely way to spend a sunday afternoon.
So if you are at home with no ingredients, chop, chop...off to the stores for like four ingredients really...we are making triple chocolate fudge brownies, with chocolate buttercream frosting.
BROWNIE INGREDIENTS
1/2 a cup butter( plus more for greasing)
1/2 a cup sugar
2 eggs
1/2 cup unsweetened cocoa powder
1/2 cup all purpose flour( plus more for dusting.)
1/8 cup milk (this is like 2 tablespoons)
FUDGE SAUCE
1/2 cup milk
3/4 cup sugar
1/4 cup unsweetened cocoa powder
3 tablespoons butter
CHOCOLATE FROSTING
1/2 cup milk
2 1/2 tablespoons flour
1/2 cup butter
1/2 cup sugar
2 tablespoons unsweetened cocoa powder.
Now, I know this list is daunting, but if you look at it, its basically the same three ingredients over and over again. the best thing is, you will only use 30 minutes of your life to make the richest brownies on this earth, I am actually a bit iffy about sharing my recipes, like will you come to my store if I just showed you how to make it??

PREHEAT your oven to 200 degrees Celsius. you need to do this before even assembling your ingredients, there is nothing worse than an unevenly warmed oven. Butter and grease a cookie tray, pan, or pie dish...I have used all. no difference
Assemble your ingredients....
In a bowl, cream your butter and sugar using an electric mixer, they are really fast, and easy on your arms. if you don't have a mixer, just use a whisk. creaming is just beating the sugar and the butter until its light and fluffy. crack your eggs, and mix it in well, around one minute with your mixer. sieve in your flour and cocoa butter and mix. You need a rubber spatula to scrape down the sides so that the mixer does its work...you can move the mixture to the edges of your bowl, or use a spoon too. This is my absolute favourite bit, the ingredients come together to form this lush looking ripple everytime your whisk goes through. its gorgeous. divine ;) put in your milk, and whisk it up some more until all the milk is properly incorporated into the mixture. AND YOU ARE DONE! pour your batter into a greased pan. it will be very thick and heavy, Like Sofia Vergara's accent and ass, and pop in your oven.
In a heavy saucepan, sufuria or pot, mix in your milk, sugar, and cocoa and mix in until its dissolving. put it on heat, stove, gas, jiko...whatever man. it has to be low heat and stir with a wooden spoon until all the sugar and cocoa has dissolved completely.put in the butter and amp up the heat. DO NOT STIR. just let the mixture boil, this is very very delicate, if you mess up, it burns, your skin, your tongue, your life!! DO NOT MESS UP..lol...now if you were making just chocolate fudge, you would need the mixture to boil to the soft ball stage but you are not, so its not needed. take off your pan from the heat and let cool slightly...if you wanted nuts in your fudge you can put them in now. then, being very careful, beat the fudge with your wooden spoon, this takes like 3 to 4 minutes, no really, beat it up, all your anger and frustration, let that fudge have it!
Your brownie should be done now..take it out of the oven onto the cooling rack..stick a toothpick or clean dry knife, if it comes out clean, your brownie is good...you can keep it in for longer if you wish, but mine takes ten minutes....so in around fifteen minutes, you are done with your brownie, and fudge sauce...using a spatula, just spread the fudge sauce over the brownie...the brownie will still be pretty hot, so be careful it doesn't break as your spread the sauce. you are done! let it cool. completely.
now, its time for the chocolate frosting. I hate frosting. Its too sweet, too buttery, too greasy, like you feel the zits come out immediately you lick some. These two are my tricks with frosting....icing sugar and flour.
Icing sugar is so soft...softer than caster sugar..in fact, if you see a recipe asking for caster sugar, use icing sugar instead....for instance, all the sugar i used here was icing sugar...i only use granulated sugar when am baking, like in the cake, buns, pizza etc. but on frosting, glaze, fondant, I will always use icing sugar.
So, take your milk, and the flour in a sufuria and dissolve it completely! make sure there are on lumps in...then heat the mixture, on low, stirring. you need to always stir. funny things may happen. the milk will thicken. thats good...smooth and thick...(ignoring that pun is really tough on me) take it off the heat, and let cool, it has to be be completely cool....it wont take long....i let it cool as I spread the fudge on the brownie.
in a bowl...again....cream your sugar and butter together..light and fluffy..you know the drill. then slowly pour the cooled milk mixture in the sugar and butter....keep mixing. then mix in the cocoa until well incorporated...I use this frosting for all my cakes, and cupcakes that need buttercream frosting. if you want vanilla frosting, add a drop of vanilla in the cooled milk before mixing it with the creamed butter
walk away..your brownie and fudge need to be completely cool before you spread your frosting. once you spread it, just slice it up in squares..this will make around fifteen large brownies, you can halve the recipe so easily...just use quarter cups instead of halves :)
you are done in under thirty minutes.
This recipe is very very simple....it looks bulky, but you are doing three recipes at once..its a fun challenge. this makes the most crumbly moist brownies I have ever made. The brownie and fudge sauce recipes are completely my own. so they are Lola specials, I don't mind sharing, just give me a shout out when you do yes
the flavours are really rich..when you have a bite, the brownie just dissolves in your mouth, then you taste the sticky chewy fudge frosting...and then the frosting just mellows out the dark chocolate flavours. When I say rich, I do mean it. Weight watchers, this will put you back a few hundred calories back, but completely worth it in my opinion. It cures ALL sugar and chocolate cravings...tested and proven. I have chocolate junkies in the house who clear out a whole cake by themselves (750g) in one night...and the brownies are still alive...every few hours you see a chocolate brownie or two missing, and there in no greater compliment to a cook than people whining about how good something is! ;)
Its a fun thing to do with kids as well, just keep them a way from the fudge until it cools completely.
